Sunday: Dweji Kogi (Korean Spicy Pork)
Tuesday: Baked Potato Soup, Challah
Thursday: Roasted Red Pepper Pasta
My dad bought some oi kim chee (Korean spicy pickled cucumber) and kim chee (spicy pickled cabbage) from the Korean market, so I was inspired to make some Dweji Kogi (Korean spicy pork). The kid s ate some left over chicken. Just plain. Not spicy. At all.
While most of the country is in the midst of summer, the weather has turned chilly (low 50’s and 60’s) and gloomy here in the Monterey area. Perfect weather for some creamy baked potato soup and rich challah bread. Which reminds me that Caleb inspired me to create a Honey Chocolate Chip Challah bread a few months ago that was to die for. I really need to try that again since I was functioning on Mommy Brain and didn’t write down the recipe. Argh!
Shane requested a pasta dish. I’m getting bored with our usual pasta dishes and saw that SaveMart has red pappers on sale 4 for $1. So I got four of them and plan to create some kind of roasted red pepper sauce.
And as usual, I try to make enough food to last us two nights. It helps my sanity to not have to cook every night.
