I missed last week. I’ve been struggling to find blogging time lately. I had planned on making lentil taquitos because I have a lot of lentils in my pantry and no one here really enjoys lentil soup. But my lentil taquitos were a big fat fail. Oh well. I did end up making chicken and cheese taquitos and that was fun to learn how to do something new. I didn’t realize there is a trick to rolling them. Fry the tortillas in oil for 10 seconds on each side.
This week we have the family favorite: Bacon Alfredo with Chicken! And one of my favorites Beef Barley soup, even though no one else really digs it. At least they’ll all eat the Challah!
If you have kids, you really should try out Rachel Ray’s Mac and Cheese with Butternut Squash. I add sausage in it because we’re big meat eaters (well I’m not naturally, but by default). The butternut squash adds a richness to the cheese sauce. It’s delish!

Sunday: leftovers (mac and cheese and pizza)
